Eating Balanced Meals Can Help Maintain Good Health

A recent Shoppers Drug Mart Flu Poll found that 51% of Canadians believe the best way to protect our self from flu is by eating well. I believe having balanced meals helps us maintain immune function, and good health so I try to make a variety of healthier dishes for my family and I. I love to make our dishes colourful and especially make it a point to do this in the winter.
I made this delicious Citrus and Beet Salad that was on the Loblaw's website recipe section. 

1 small red ruby grapefruit, peeled

1 Navel Orange, peeled
16 oz no name Sliced Beets drained or sliced boiled beets
4 cups Baby Spinach or Arugula or a mixture of both
1/4 cup PC Blue Menu Lemon Poppy Seed Dressing
Thinly sliced red onion 
Pomegranate seeds 


Holding the grapefruit on its side on the cutting board, cut it into eight slices. Do the same with the orange. 

Using 2 slices orange, 2 slices grapefruit and 4 slices of beets for each of four salad plates, arrange slices on plates in large circle, slightly overlapping them and alternating beets with citrus.

Gently toss spinach with 2 tbsp of the dressing. Mound one-quarter onto the centre of each plate on top of beets and citrus. Drizzle remaining 2 tbsp dressing over the fruit. Serve immediately, garnished with red onion and pomegranate seeds.
Since children are indoors more during the cooler season because it gets darker faster, it would be a fun learning experience to get them involved in the kitchen with easy to make healthy and colourful recipes like the ones on the Loblaw's recipe page.
