Recipe to Make Restaurant-Style Lamb Lollipops

I regularly cook, bake, and grill lamb, as it is a high protein red meat that has a good source of vitamins and minerals. I find a well marinated lamb cut makes a delicious meal for lunch or dinner. Everyone in my family enjoyed having this lollipop style lamb.

I cut the lamb rack, which was already "frenched" so I just needed to cut between the pieces before marinating and then baking it. I served it on a bed of flavoured rice and salad, which made it a tasty complete meal.

For the flavours to infuse, the meat must be marinated for 24 hours and well cooked.

1 rack of lamb about 1 to 1 and 1/2 pounds
1 onion coarsely chopped
2 inches long fresh ginger peeled and coarsely chopped
5 cloves garlic peeled and coarsely chopped
1/3 cup lemon juice
1/2 tablespoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
1/2 teaspoon ground turmeric
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup olive oil
1 teaspoons salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon cayenne pepper optional

Put the chopped onion, ginger, garlic, and lemon juice into a food processor or electric blender, and blend it till it becomes a smooth paste. Add all the spices, salt, and oil to the paste.

Using a fork pierce all over the meat, then use the paste to marinate the meat and leave it covered in the fridge for 24 hours. During this time, you can turn the meat pieces so both sides get well marinated.

After the meat has well marinated, heat the oven to 450F and bake it for 10 minutes uncovered. Cover the tray with foil, and then reduce the heat to 350F and bake for 30 minutes. Remove the foil and bake for another 10 minutes. This baked lamb lollipops should not have any liquid gravy, however there will be a thick marinate gravy that can be served with the meat.

Serve the meat while it is hot on a bed of rice with a salad.

  2. Mmm...those look delicious! I love lamb but don't cook with it often. Knowing that it's high in protein which I need as a dialysis patient, definitely makes me want to add it to my grocery list more often!
