East is Easy Vietnamese Inspired Savoury and Sweet

I enjoy making a variety of dishes from around the world to keep our meals fun and interesting. I find it is always fun for my family and I, to travel to different parts of the world with different cuisines and explore food from the comfort of our home. This weekend I decided to make rice paper rolls, which I haven't made for a long time. These filling rolls can be served as a snack or a meal. Along with these Vietnamese Spring Roll Wrappers, I served a delicious cassava cake
Although I like to plan my meals, some days this is not possible and meal times come before I am ready for it :) At these times, I like making simple yet interesting dishes so having convenient sauces, noodles, spring rolls, frozen flat bread, canned beans like chickpeas at home makes things easy. This way we can keep the expenses of eating out less. 
Here is the recipe for the Rice Paper rolls I made during one of our meal dilemmas...  
Spring Roll Wrappers or rice paper rolls
hot water

For the filling...
1/2 cup cabbage thinly sliced
1/2 cup carrots thinly sliced
2 tbsp dried shrimp or 2 tbsp fresh shrimp chopped
1 tbsp soya sauce to taste
1 tbsp sesame oil or other type of oil

If you are using dried shrimp soak for about 5 minutes and then add it to the stir fry. Heat oil and sauté the cabbage, carrot and shrimp on medium high heat. Then add soya sauce and remove from heat. 

Soak the rice paper wrap inside the hot water for about 10 seconds and place the filling in the center of the rice paper wrap. Fold the sides on the left and right towards the inside and then roll the side close to use in a jelly roll. Serve with classic Vietnamese style Nuoc Cham Dipping Sauce or Sweet Chilli Dipping Sauce.

  3. the spring rolls look like a great idea without the shrimp, just with vegetables. I think I need to try those one day (I don't eat seafood so no shrimp in mine lol)

  10. I have never made spring rolls but I do love to eat them. A friend of my sister's makes them and brings them to get togethers. They could be my 1st, 2nd and 3rd courses.
