Snacking on Chex Brittles During Summer Activities

I am excited to enjoy the summer sunshine doing simple things. Either sitting in the backyard, enjoying a book, making barbecue meals, watching the children play, or going on long drives and road trips are wonderful ways to make memories and enjoy the sunshine. While doing all these things everyone in my family look for yummy snacks to munch on, so I made these Chex Brittles with Chex Cereal.

This recipe for Chex Brittles is easy to make and delicious. Once you try these snacks, it will soon become a favourite. Chex is a gluten free, healthier alternative to many other snacks.

4 cups Rice Chex™ cereal
1/2 cup salted peanuts
7 oz or 1/2 can sweetened condensed milk
1/2 tsp vanilla optional

I have adapted the recipe from here.
Preheat the oven to 300F. Spray a 15" x 10"x 1" pan with cooking spray. In large bowl, mix all ingredients until evenly coated. Spread in the pan in single layer. 
Bake 20 to 22 minutes or until light golden brown. Remove from the pan and spread on a waxed paper to cool, about 15 minutes. Break into pieces. Store in airtight container and take it with you on road trips.

  6. Sounds yummy! I think I have everything but the Chex to make this - I'll have to pick some up the next time I'm at the grocery store.
