My family is big on snacks, and enjoy it all the time. During the school days, I prepare healthy snacks for my children to take to school and enjoy during their recess break. We also like to have snacks in the evening right after school before having dinner. I find preparing healthy snacks and having them accessible to my children to enjoy as they wish is important to me because this way they get the amount of servings they need much easily than at meal times.
I also find when the weather gets colder having snacks is more easier and filling than having big meals. During my recent visit to the #FallMarketPlace at Walmart, I bought the Wheat Thins Popped and Walmart Fresh Baby Carrots to make this easy snack that everyone in my family enjoyed.
I found the Wheat Thins Popped in the cracker section, and the carrots in the vegetable section at Walmart.
For this recipe you will need...
Wheat Thins Popped
Bolthouse Farms Baby Carrots
Hummus homemade see the recipe below or use a store bought hummus
Spread a bit of hummus as you wish on the Wheat Thins Popped, then put few pieces of chopped carrots on top of the cracker, and serve it.

Here is a recipe for one of our favourite homemade Roasted Pepper Hummus
1 cup chickpeas or garbanzo beans
1/2 cup roasted red peppers
1 to 2 tbsp garlic to preference
1/4 cup olive oil
1/2 tsp chillie powder
1/2 tsp cumin seeds ground
1/4 tsp salt to taste

We can use either soaked and boiled chickpeas or canned. Roast the red pepper in the oven or on a barbecue or grill and peel the skin off before adding; this can be done when time permits and left in the fridge till needed.

Put all the ingredients into a blender and puree till smooth. Do not add water as oil is enough to make it smooth. The remaining spread can be kept in an air tight container in the fridge for about 3 to 4 days. This hummus is made without tahini or sesame seed, however if you want to add the tahini paste then add 1 tbsp tahini with 1 tsp lemon juice. If the peppers are sweet add less or more chillie powder to taste.
