Our Summer Ice Cream Bar

This Ice Cream Bar my family and I enjoyed is a sponsored post for #CollectiveBias using ingredients I purchased at Walmart. In my family ice cream is associated with warm sunny days! Although, we enjoy licking our ice cream on a cone we always lean more towards having ice cream with other desserts. Every time I make our favourite pineapple upside down cake, apple pie, fruit salad, or a milk drink with rose syrup known as Falooda, a tub of ice cream disappears in no time at all.
For our Ice Cream Bar, I made a delicious pineapple upside down cake and Falooda accompanied with Chapman's Vanilla Ice Cream. You can locate the Chapman's Ice Cream at the cold dessert aisle at Walmart where it is marked under Ice Cream.
Chapman's has lots of different flavours of ice cream that pairs well with different desserts. 
To make the pineapple upside down cake to pair with the ice cream, follow the directions below.

1 cup brown sugar
4 oz butter sliced
4 eggs
6 oz sugar
5 oz flour
1 tsp vanilla
1 tsp baking powder
1 ripe pineapple cut into rings core removed

I made this cake in a cast iron pan that is 12.8" L x 10.3" W x 1.94" H. If the pan is not deep enough, the cake might spill over when baking so choose a pan that is deep. When using a cast iron pan you can reduce the amount of butter you are using for this cake. Place the pan over the stovetop, and put the pieces of sliced butter and sauté the pineapple with the brown sugar until the pineapple caramelizes.

Prepare the sponge cake batter by beating the eggs till it is fluffy and creamy, then add sugar and beat till it dissolves. Add vanilla and beat. Mix the flour with baking powder then add it to the mixture and beat, but don't over mix.
Bake in a preheated oven at 375F for about 30 to 40 minutes until the skewer inserted in the middle should come out clean. Make sure to check on the cake because it might be cooked faster and to avoid the top from burning. Cool the cake for a few minutes on the pan before turning it upside down and serving. Serve the warm cake with ice cream.
We also enjoy ice cream with this easy to make delicious drink. For this drink you will need....

1/4 cup falooda syrup such as rooh afza syrup (also available at Walmart in the Indian section)
2 cups cold milk
1 tbsp black poppy seeds soaked in warm water 
Ice cubes optional

Mix everything and serve with a scoop of ice cream.

  2. What's falooda syrup like? Is that a fruity drink? Looks really good!

    1. Falooda is a sweet syrup made with rose water, sugar, colour etc. it is not fruity but a fragrant syrup you add to milk. This is a summer drink that can be topped with different toppings like ice cream, vermicelli, soaked poppy seeds, nuts
      The syrup is available in Indian shops, even in stores like Walmart and Metro. Hope you try
