The hustle and bustle of back-to-school can be stressful for everyone in the family, but it doesn’t have to be, at least when it comes to planning healthy snacks and meals. A recent survey conducted by Nanos showed that 52% of respondents thought kids ate less healthy today than they did when they were young, and many still stress about school lunches. Preparing ahead of time is a great way to ease our mind and make sure we have a well-balanced diet throughout the day.
Following are some delicious recipes, courtesy of Sabra Canada to prepare tasty and fun lunch box, on the go or make at home snacks for our children during the busy school year.
To make 2 Chicken Salad Sandwiches for lunch with supper leftovers, you will need...
½ cup Sabra Hummus
1 cup grilled chicken breast, cubed
1 tbsp. finely diced scallions
2 tbsp. diced celery
2 tbsp. diced red pepper
1 tbsp. water
salt and pepper to taste
Combine all ingredients and stir well. Serve in a bowl of radicchio as a salad, on a sandwich, wrap, or as an appetizer with veggies, chips or pita.
This Bruschetta with Baby Greens Salad serves four and is a quick and delicious snack between activities and meals or to pack for school. Serve with a mound of baby greens salad, and watch the children bite into a delicious better-for-you treat.
1 container Sabra Moroccan Matbucha (for topping over the hummus on bruschetta)
1 cup Sabra Hummus
4 cups arugula, or baby greens
15 nasturtium flowers (or other edible greens for colour)
1 baguette, 16 slices (toasted)
1 tbsp. salad dressing
Slice the baguette and toast, then allow to cool. Spoon about 1 tablespoon of hummus overtop the bread (and then add some matbucha if desired). In a medium bowl, toss the greens with dressing. Serve on a plate with a mound of salad in the middle and 3-4 bruschetta. Garnish with edible flowers.
Single Serve Hummus and Pretzels are perfect after-school snack for busy kids on the go that has protein, as it is made from pureed fresh chickpeas with garlic, tahini and spices.
