Hearty Sandwiches with Ivanhoe Cheese

School nights can become hectic sometimes, with running to after-school activities and getting homework and projects done. I like to make sure we have the ingredients available for our favourite, healthy, quick meals during the school year handy, as the nights arrive faster each day and we all get tired pretty quick. Our dinner menu usually consists of flavourful pastas, noodle dishes, hearty soups, salads, or loaded sandwiches.

The leftover from these healthy dinner menu, sometimes is perfect for the next day's school or work lunch. It is important when we prepare meals, no matter how quick we are trying to fix up a meal to make sure our diet is healthy and include the main food groups. I know with my family everyone only enjoys the meals if it is flavourful, so thinking before hand and planning what to prepare is important to me.

This delicious meat and cheese sandwiches are one of our favourites. This meat filling can be prepared beforehand. For this you will need...

1 pound of thin slices of beef
1/4 tsp turmeric
1/2 tsp salt add more to taste
1/2 tsp pepper add more to taste
1 tbsp tamarind softened in 3 tbsp water
2 tbsp oil
1 onion cut into slices optional

Soften the washed tamarind in the water and take only the pulp, and discard the rest. Coat the meat with turmeric, tamarind, salt and pepper. Heat the oil and fry the meat on medium high heat when it is cooked on one side turn it and cook the other side, keep a lid on the pan and let it cook so the meat stays moist. Adjust the heat accordingly so the meat doesn't burn.

Once the meat is cooked, optionally add the onion slices and leave the lid closed when the onion is caramelized remove the pan from the heat. This can be prepared a head of time and frozen until needed. Before using thaw it and heat it up.

For the sandwich, you will need...
Sliced bread
Butter 
Ivanhoe cheddar cheese
Prepared meat slices according to the above instructions
Tomato slices

Place the Ivanhoe cheese, meat slices, and tomato slices on the bread. Heat the pan and cook the bread in low heat, until the cheese has melted and the bread is golden brown. Be generous with the butter for a flavourful taste. We can make this with any type of our favourite bread I used sourdough bread.
